Panch Phutan is a blend of five important spices i.e. fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed in equal proportion. It is usually fried in oil or ghee before adding anything else to the pot - this releases the aroma of the oils in the seeds and causes them to pop in the pan.
