Desi chana is a variety of chickpeas that is native to India. It can be black, green or speckled, and is hulled and split to make chana dal, Kurukshetra Prasadam (channa laddu), and Bootor Daali. Desi chana is also known as kala chana or chholaa boot or Boot in Assamese. Chanas are dry roasted with skin on a slow flame till they are crisp, and are consumed as snacks or used in preparation of variety of dishes.
