Amchur (Mango Powder)

Amchur, also known as mango powder or green mango powder, is a spice powder made from dried, unripe green mangoes. It's a prominent flavoring agent in Northern Indian cuisine, and is used throughout Asia. Amchur has a tart and slightly sour flavor, and a warm, sour-sweet, and slightly resinous aroma. It's often used as a souring agent in curries, vegetable dishes, and marinades, replacing lemon juice at a ratio of 9:1.

Amchur is rich in dietary fiber, antioxidants, and other bioactive compounds, which can help lower bad cholesterol and reduce the risk of heart attacks. It's also a good source of vitamins A, B-complex, C, E, and K.
