| Instructions | Niger Chutney – Instructions Heat a pan on low flame and dry roast niger (karale) seeds until they turn aromatic and slightly dark in color. Allow them to cool. In the same pan, lightly roast garlic cloves and dry red chilies (or green chilies) until fragrant. Add the roasted niger seeds, chilies, garlic, and salt to a grinder. Grind into a coarse or fine chutney as preferred. Optional: Add a small amount of roasted peanuts or cumin seeds for extra flavor and grind again. Adjust salt as needed and mix well. |
