It is prepared by processing or boiling sugarcane juice, obtained from the sugarcane plant “Saccharum officinarum”. Jaggery is also known as gud, vellam, Bella or bellam. In an Indian diet, it is consumed either directly or used to prepare several sweet-based foods.
