Amchur, also known as mango powder or green mango powder, is a spice powder made from dried, unripe green mangoes. It's a prominent flavoring agent in Northern Indian cuisine, and is used throughout Asia. Amchur has a tart and slightly sour flavor, and a warm, sour-sweet, and slightly resinous aroma. It's often used as a souring agent in curries, vegetable dishes, and marinades, replacing lemon juice at a ratio of 9:1.
